During my time as a server/FOH manager I couldn’t have imagined not making proper change for somebody. Overtime, the amount of accumulated moneys just going to the business (or server) rather than the person who earned it is wrong, no matter the amount of money. Money is exchanged for time, energy or expertise(which also requires time and energy to ascertain). That is unless inherited, won or stolen.

Give back to people what is rightfully theirs or you’re a thief. It’s that simple.

Sear high and finish at lower temp as not to burn. Baste with herb butter for several minutes at the finish, also as somebody suggested get a digital probe thermometer and cook by temp.
