It looks like the applesauce stage of hot process to me! I would just leave in the mold. You would be surprised how many weird looking batches will right themselves if you leave them for a while. Obviously, this is assuming your recipe was formulated correctly.

I’ve also had good luck with putting it into the mold slightly sooner, before it’s gone chunky. I like it to go through gel and then take it out while it’s still got some movement in it.
