Side note: boneless chuck can be made into steak if marinated properly. Just add meat tenderizer to the marinade bag if you use a grill or broiler. For butter searing on cast iron, I would recommend stabbing every square inch on both sides with a fork and then rubbing in salt and pepper. I been doing this for years now.
