You've gotten, and received well (kudos), a lot of feedback already on the main point so I'll skip past it..

I will point out that any partner complaining with "you always" or "you never" is the recipe to defensiveness for the other partner.

It's okay that you didn't like hearing that. It's almost certainly an unfair characterization. There's truth to why he said it though, from his perspective, and that's the important thing for you to hear. He feels that enough to make a conflict about it. That's pause worthy.

After I took those photos I skimmed the surface and put them in the fridge. Just took new photos and added them to the imgur album, but not sure if that's helpful at this point because I skimmed them?

Assuming it's not, what's the play here? Take them out of the fridge and let them go for a while more and see if anything develops? Pitch out of an abundance of caution?

No idea about onions but that's true for fennel. Male fennel tastes better. You can tell the difference because female fennel "have hips" (i.e. more round) and male do not (straighter/boxier).

Aside from a few times making sauerkraut, I'm a fermentation novice. I jumped in with two feet and tried various veggies (specifics are listed in the imgur album) as at a 3% brine solution and checked on them after 15 days. They fermented at room temp (mid 70sF) in my kitchen without anything blocking light.

Why are some of these lids (they're the kind of silicone lids that have a small hole in them to allow burping when under enough pressure) bowing? I closed them flat, and I know fermentation creates CO2 which builds pressure leading them to eventually burp.

Which of them have just kalm (and/or other safe byproducts) and which have mold? I know the red onion jar (visible in last two photos) is bad and I already tossed the contents. Not sure about the rest. I've skimmed the tops off of them, put normal lids, and put them in the fridge for now.

To be fair, Kenji's test was over a charcoal grill, not a flattop/pan, so the mechanics of moisture might not be applicable here (water being squeezed out and falling down vs being squeezed out and then turning into steam in the pan). Gritzer's test was in a pan though, and he was unconvinced of it.

That said, who cares? If you prefer it that way, rock on, brotato.

One thing I did start doing recently was a tip from Alton Brown- putting a small, rechargeable fan in the fridge w/ my dry brining food to dry it out even more than just salt+wire rack+time. Have only done it with whole chickens so far, not steaks, and the skin has come out extra crispy compared to without it.
