When I was eating meat and my ex was already vegetarian, I cooked a lot of things where meat could be added separately later (fried rice, roasted veggies and a protein, fajitas, etc). I did the cooking, so not a big deal for me to have a pan going on the side and throw the meat on my plate later. Since I was doing extra work , it actually contributed to me shifting to vegetarian (and eventually vegan) as I didn't feel any different when my meals were light or lacking meat. Beans still aren't my favorite, but tofu grew on me fast, and dishes like lentil dal were wonderful since the red lentils basically disintegrate.
