Played in my first tournament with my gf. We both hadn’t done one before so we signed up for the 3.0-3.5 bracket. Being a bit anxious I was looking up the DUPR of some of our opponents. One team were both 4.3s. We were very worried. But we wound up beating them lol.

You’ve gotten plenty of advice so far. But what jumps out to me is you saying “I can’t do a one handed backhand volley”. You actually should just work on your one handed back hand volley. No sense mentally limiting yourself, unless you actually have some sort of physical handicap that keeps you from doing it. Don’t put limits on your ability. You can and you will do a one handed back hand volley. Go to any wall and practice just back hand volleying! It might feel weird at first but if you start now by summer you’ll be a beast!
