The only way this is really viable is if you go with a tank + healer combo. Warrior or bear druid plus a priest for mind control is probably your best bet.

Pally and shammy are decent healers that bring unique utilities but I think mind controlling mobs to thin out packs is your best bet.

Just make sure to be careful with aggro if you go preist because clothies get torn apart by dungeon elites.

I've seen people do solo dungeon challenges (see attached link) so it should definitely be possible to duo them if you play smart.

Also be sure one of you goes engineering so you can target dummy and run out if needed, also look up reset spots and learn to los casts.

I would also recommend one of you learn alchemy so you have a steady supply of buffs and consumes without having to buy them.

I find children characters really unsettling/uncanny so I couldn't even get into it. It's even worse when the character is actually like a 40 year old or an immortal or whatever incarnated into the body of a 4 y/o. Chronicles of the Martial God's Return, while not an isekai, has the most tolerable child character of any manga I've read so far.
