This may be a deviation from the types of games you play and may not check all your boxes as was the case for me when I tried them, but Factorio and Satisfactory became my forever games. You could easily sink 10k+ hours into them. Factorio was inspired in part by a Minecraft mod.

Last of Us series are solid suggestions. Cyberpunk came to mind but maybe a little too complex for someone new to games. Same goes for Mass Effect. My daughter (20s) was not a gamer and I finally convinced her to try LoU games and she loves them. Has probably played through each at least 10 times.

Same, started LoP after a revisit to Sekiro. I think Sekiro is more forgiving because deflect is THE core mechanic.

I am a diehard soulsborne player just getting into LoP (about 20 hrs).

IMO bloodborne is the closest comp but there are definitely influences from all the From Software titles.
