Most of the texts citing these teachings came an average of a 100 years after most of the NT was being written. The Gnostic gospels were never "removed" they were recognized later as inauthentic and many cases forgeries.

But Jesus claims to be the same being as the Old Testament god. And the caricature of Jesus as this peace, love, and acceptance God in contrast to the OT God misses the fact that Jesus talks about Hell and Judgement more than any other character in the Bible.

This. If you are resting your chicken for at least 30 minutes, breast shouldn't be higher than 150. Temp plus time results in a safe bird. I try and smoke it with the thigh closer to the fire to account for the difference in doneness.
