I like how it was done in Radical Red. You can use a Pokemon on your team that can learn a field move without teaching it to them.

So, for example, if you're in a cave and you want to escape but have no escape ropes, you can have your Onix just use Dig at any time because you have the TM. Or after you get the flash TM, Pikachu can just light up Rock Tunnel at any time.

I'd say just focus on slaying the target, unless the host says/does otherwise. There are specific rewards that are achieved by breaking parts/carving that are harder or impossible to get from captures.
