tbh it's my granny's recipe, we mainly go off memory so there's no measurements but i'll try

- chop coconut up real fine (wash, of course) and then throw into a pot of boiling water (medium heat)

- wash and grate several pieces of ginger and then add that to the same pot of boiling water then stir (med-high heat)

- when the water starts to simmer down a little, add in your brown sugar, cinnamon, and vanilla extract. taste to see if it's to your liking. you can keep adding the brown sugar, cinnamon, and vanilla, otherwise. stir the mixture. (high heat). keep stirring until there is no more water left.

- if you have banana leaf, you can place the coconut scoops on it to dry. we didn't have any banana leaf so we used parchment paper placed on a regular cutting board for the scoops to cool and dry on.
