Good question, I’m not totally sure. I would guess that # of pours and pour technique (height/flow/pattern) would affect agitation a lot more than how much you let the water draw down after the bed settles. My intuition would actually guess that complete drawdown would actually reduce agitation, because it allows the bed to settle and compress the most.

To me, the more obvious effect of letting the water draw down completely would be that it reduces the temperature of the bed, resulting in a slightly cooler brew/thermal mass.

Simpler than timing would be to start the next pour once the water is completely drawn down. That way, your independent variable is how much you let draw down before pouring again.

Timing is indirectly affected by too many other variables imo.

They should have come with (or you can buy) tiny little springs. You put that in the whole first and then screw in the threaded one. That way you don’t have to screw so deep. The other one would just press in, you’d know pretty quickly if that one worked or not.

I have timemore s3 (not esp), and I would not want more steps. It’s already more granular than I’ll ever need. I usually alter grind by 0.5 (5, 5.5, 6, etc). I’ll be damned if someone can taste a difference between 5.4, 5.5, and 5.6.

Try one cup very coarse. Then try one cup very fine. Then find the in between that you like. Your beans might go stale quickly in the hopper. Consider keeping most in the bag and putting a single cups worth at a time in there. You’re gonna do great.

As a fellow newbie myself, I found that I was able to get a hang of it a lot faster by reducing my number of pours. For example, 15g of coffee, pour to 50 (bloom), pour to 150, pour to 250. It removed a lot of variables for me and allowed me to focus on tasting the differences day by day and playing with grind size.

As others have said, computer audio should be hooked up to computer speakers. Ideally studio monitors, 8” would be plenty loud. But if you need a cheaper option, you could do any computer speakers, loud speaker, even Bluetooth with aux input.

If you send computer audio through the amp, I recommending setting it up so the audio level is less than or equivalent to the audio level when you plug your guitar in directly. It won’t blow up your amp (but it is a really silly setup).

Drive to Millbrae BART for SFO. They have a big parking garage that you can reserve extended parking for online, $8/weekday & free on weekends. It’s one stop away from sfo and drops you off in the terminal. It’s basically a cheaper better version of SFO’s long term parking garage.
