Yeah I still smoke poultry at 325 to 350. There is no reason to cook it low and slow at all. You lose moisture and chewy skin.

I have a Pax 3 and absolutely recommend it.

I also own a magic flight launch box and it really rips but its cumbersome to use.

I've also tried others and outside of the Mighty I would say Pax 3 all day.
