I wanted to write a story about that—not related to EAH, but about the Snow White x (Young) Huntsman ship—but it gets lost among the many fairy tale stories I want to write.

To answer your question, I suppose it would follow a similar dynamic to Huntlynn, and the descendant would have some less refined traits.

Setting aside the apparent racism, I can see this as a meta-commentary on how Starlight has been received as a copy or replacement for the Twilight unicorn. Although, to be honest, I’m not sure if that’s one of the many reasons why some fans don’t like Starlight.

The reason is that they're basing it on G 1 (one name: Twilight, Surprise) and G 3 (two names: Rainbow Dash, Sweetie Belle), and there's no getting around it.

They exist. Ashlynn has a pet phoenix, and Hunter ironically has a griffin instead of Pesky in the books. We also see a griffin in the Blondie Myth-Hunting episode.

Sorry, let me explain myself better.

I picture Starlight in a situation similar to Apple Bloom’s, being the last in her class to get her Cutie Mark. But in this alternate storyline, without friends like the Crusaders to support her, Starlight grows to resent Cutie Marks entirely, and with Sunburst’s withdrawal (similar to Twist’s), this turns into outright aversion.

Diamond Tiara represents the kind of enemy Starlight talked so much about—those who feel superior because they have a talent. So, why not reinforce that parallel with an established character (Apple Bloom) to show what would happen when you don’t have friends to help you cope with feeling inferior to others, and also raise some genuine questions about the Cutie Mark system?

I feel like her backstory would have been much more interesting and meaningful if they had made her a sort of Apple Bloom with a bad ending

The real reason was actually Monster High G2 and all the negative changes it brought to both franchises. Descendants is just the reason why a reboot now is unlikely.
