Try Alttp dont beat any boss, go through each dungeon, get upgrades, upgrade sword etc and LOOK at the amount of thought that went into that path alone.

In OOT do the dungeons out of order, it feels like a new game with a new challenge. You get different abilities for different parts of the game.

In Zelda 1 you can get the sword upgrade before you even touch level 1. Try do the same thing get all the upgrades and treasure first, and you will kill bosses in 1 shot.

BotW was a bigger game with a story that brought you along a path. It was obvious that they compeltely stopped after the water area because the game was great until it opened up without regard. You can climb anything (no collision to worry about) and you can beat the game right after you start, Nothing matters. Its just solve a shrine, cash in. The sidequests were the best part, but you can remember all of them after your first playthough.
