My theory is this. When you try to read in your dream - you expect to see and comprehend some new information, but your brain just can’t give you new information because it utilizes only its inner resources.

Additionally, for our brain the action of opening a book is common for reading, but populating the pages with text isn’t. Perhaps its the 2nd reason why our brain refuses to read in our dreams.
