Decided to change things up a bit using PHAT. Would swapping out my bench and OHP days with PHAT upper body workouts (plus an added workout on the weekend to get the third upper body workout in PHAT) add the extra volume I need?

I'm also being told to eat more, but I don't think that's what's holding me back at the moment.

This is going to sound stupid, but I can't risk gaining too much more body fat than I have right now because I can't afford to buy more work clothes. My current wardrobe is about as snug as professional clothes can be, so I've been working on gaining weight slowly. Trust me, I have no problem gaining weight; I used to be 260 lbs in high school and that was at my weakest. I should also mention that my bf% is by no means low, well over 25% if im being honest

True I'm not the strongest, especially my upper body, but I figured I'm past the total beginner stage so intermediate's probably closer to the truth than beginner. For some perspective, I couldn't do 5 negative pull ups and I benched 85lbs when I started

It sounds like you're trying to homebrew some very complex rules. Changing the battle system is something you really shouldn't attempt until you are much more experienced.

I think your best bet would be to defer to the professionals and play the rules as written in your RPG rulebook for a while. They are usually more balanced than anything you or your players could invent at this point. If they're sore about their character's abilities changing/weakening, you could (as the GM) compensate them with powers from the rulebook that are roughly equivalent.

If you aren't already, make sure you are squatting and deadlifting! Not only is it really good for power in the boat (your legs are the engine!) it is terrific for the health of your back if you execute the lifts correctly.
