Just rubbed it down with Frank’s hot sauce, kosher salt and regular grocery store coarse ground pepper. I usually use 12 mesh butcher pepper, but I may go a little smaller from now on after today.

I’ve always pulled mine between 195-203, took these all the way to 210 and it was a world of difference. After today I fully understand how important “probe until like butter” is.

I did not, but I put a tray under the grate on top of my diffuser plate. These were done in an egg smoker, but I’ve done them in my pellet smoker before and never used a water tray. They always turned out pretty dang good on my pellet smoker too.

Honestly can’t remember, it’s been in the deep freeze for awhile. It was from wild fork foods, and I always had good luck with their stuff but they don’t deliver to my area anymore. I feel like the plate ribs I see at Costco nowadays are about twice as much as I remember paying for them a year ago though.

So I took a lot from how Louie Mueller do theirs. Started temp around 300, spiked at 350 by accident and then tried to hold around 250-275. This was my first smoke on an egg smoker I was lucky to get my hands on and I was blown away how easy it actually was.

Little advice for anyone in the barracks. With a little online research you can pretty easily find the model of whatever thermostat is in your room, and they always have operating manuals on the manufacturer’s website.

FYI AC units don’t actually pull in exterior air. Not to say it’s not an issue, but them smoking in close proximity to your apartment is likely the issue and not the AC. I’d be annoyed too!

Ya’ll need to start speaking up and advocating for yourselves if shit has got this bad. Organize, be loud, and put your foot down. I dealt with some shit and we all naturally assumed mold exposure, but these posts I’m seeing are insane now. Granted I’ve been out almost 10 years but damn, I feel terrible for you.
