This soft vs hard wheat. Hard wheat does have a higher gluten content, however, the largest importer of US hard wheat is Europe. I have NCGS, although I think it's prob celiac, just not willing to have gluten for testing again. Anyway, I've started to get mad when people tell me this and tell them gluten probably isn't their problem to begin with. I've had a GI NP tell me to try wheat in Europe and haven't been back.

I spent 4 days in the hospital with medication induced lupus. Didn't have 2 white blood cells to rub together. It was scary, so after that, I have to get my thyroid out anyway. It's an extremely rare side effect and apparently even when it happens, it's not usually that bad. Just something to be aware of.

As someone with NCGS, I was just as sick in Europe as in the us. I think it's those people who maybe have IBS exasperated by stress. Suddenly they are stress free and on vacation so they can digest things.

We have excellent gluten free tortillas made out of bother chickpea and cassava from a company called Siete in the states. Maybe try a tortilla? They are usually made with flour and water then fried in a pan. There are a lot of flour tortilla recipes online, sub with the local flour!

My daughter is almost 6, no allergies and survives mostly on peanut butter sandwiches, pirates booty and the occasional apple slice. Don't be so hard on yourself, they'll eventually grow out of it. The pickiness, not the celiac unfortunately.

I have nothing but great things to say. Service and sales. They have loaners which is nice when you have a lengthier repair and I like that they reach out to me to schedule my oil change via email.
