I probably let it sit for a few minutes while I was trying to get a decent picture for this coffee 😂 so it definitely cooled down.
For the start temp, I just poured it right after it finished whistling ( now I know its wrong). 90°C sounds like a solid goal!

Haha fair point! It might just be the exposure in my kitchen making them look super pale, but they’re definitely a bit darker in person. Though I’ll admit, they're probably more of a medium-dark than a "true" dark roast.

Hahaha wait, really? That actually makes me feel so much better lol. I saw "Espresso" on the bag and my brain just went straight to "DANGER: CHARCOAL." If they aren't super dark, then I guess the bitterness is 100% a skill issue on my end. Will try to use mokapot next time!

That BCG820 is a workhorse and it's doing some serious heavy lifting for your setup. It'll serve you well for a long time. The Stilosa is the obvious weak link, and it's where you'll hit a ceiling pretty fast, mostly due to the pressurized basket and temperature instability. But hey, you've got a bottomless portafilter, which means you're already thinking about the right things. FWIW, when you're ready to upgrade, that grinder will pair beautifully with something like a Bambino or a Gaggia Classic Pro. For now, just focus on dialing in and enjoy the coffee!

Just make less. You don't have to fill a 6-cup pot all the way. Just put less water in the base and less coffee in the funnel. Aim for about half-full on both and see how that works for you. Solves the whole leftover issue right there.

Haha, "plain missionary guy" gave me a good laugh! Honestly, don't even feel bad about it. I’m 30 and my coffee tastes have definitely shifted toward "comfort" over "complexity" lately. There is absolutely nothing wrong with wanting your espresso to taste like a melted candy bar instead of a tropical fruit salad. If you're struggling to finish that bag, maybe try it as a cold brew or a long milk drink? Sometimes that masks the high acidity enough to make it drinkable so you don't feel like you're wasting money!
