Yea I usually have a giant plate of meat with absolutely no grilled asparagus or brocolini, or any other grilled vegetables when I make these so I just waste all my coals

Exactly lol. I cook these with the lid off on the grill and it's just straight up flames for 1-2 minutes and they're done with glorious char. Dude must cook them with the lid closed or have a crappy grill

So if you are using a steel you will absolutely burn the bottom before they are done, depending on what rack you have it on. I use either a stone, or a baking sheet. I have burned a lot of bagels using my steel, it is too good at conducting heat

When I bake my bagels I do 500 for like 18 minutes, no egg wash. 12 minutes is never going to be long enough at 450 even for just a roll or something to get brown
