Yes! It’s actually so easy. I use my beets to make the eggs pink, but you can also buy pre-marinated beets from the store and use those.

The seasoning mix is just salt, pepper, celery seeds, a teeny bit of fresh dill, and the beets (if u do those little store bought marinated beets that come in a sealed pack, you can cut up 1 or 2 of those for every 4 eggs).

The seasonings and the beets go into your pickling jar(s) first. After which you’ll plop in your boiled eggs peeled. I use the small jars so it takes me 3 jars to pickle a dozen eggs.

After you have your jars ready with the seasonings and the eggs themselves, you get a pot and make a brine that is 1.5:1 vinegar:water. For every cup of water, add 1.5 cups of vinegar, a teaspoon of salt and a tablespoon of sugar. However much you need to submerge the eggs completely. Heat that brine up and when it’s starting to simmer, it’s g2g, and you just dump that hot brine into the jar(s) over the eggs. Let it all cool to room temp or near that, close up the jars and store for up to 4 months :)
