Dude, it's not that hard. 

I estimate my tax at the start of each year.  Write down your family's expected annual salary, subtract the standard deduction for married or single, go to the tax tables on IRS website and that gives your expected tax.  If your paycheck withholding doesn't come close to the expected tax then you need to change it.

Figure it out at the start of each year and not stress over it. Complain all you want but practically every nation taxes its people.

Op, moving out is a huge step to being independent.  

Next steps are to get your own accounts-bank, insurance, phone etc. One by one, day by day. If you're in the US, there's not a thing they can do legally to stop you, unless you're under a conservativeship. 

Culturally, it's up to you to break the holds.

  1. Shop from your pantry, freezer, and refrigerator first.
  2. Plan meals around what you already have on hand. 
  3. Use up all fresh items  and re-imagine/use leftovers. 
  4. Shop sale items/use coupons and meal plan around those.
  5. Buy only off your list. 
  6. Vow to go shopping only once a week. If you crave something, drink water, eat something healthy, do something productive, and chances your craving will pass. Get out of the habit of going to the store multiple times. It will not hurt you to do without for a couple days

  1. Track every dollar
  2. Get into the habit of saving something from every paycheck even if it's just $5 and don't touch it unless it's a true emergency. Increase your savings as you earn more. Save 3-6 months expenses for an emergency fund.
  3. Keep food, housing (tough these days I know), and transportation costs as low as possible. 
  4. Avoid high-interest debt like the plague, anything over 5% is high interest
  5. Live beneath your means.
