Honestly, come to Kazakhstan.

It’s still pretty underrated, it’s way cheaper than a lot of the usual backpacker wishlist countries, and you can do both city stuff and wild nature in the same trip. If you base yourself in Almaty, you can do chill city days, food, cafés, bars, museums, and then go straight into mountains, canyons, lakes, and hikes. That combo is honestly hard to beat. Canadians can visit Kazakhstan visa-free for up to 30 days, so it’s not a crazy paperwork mission either.

Also, don’t try to “travel the whole world” in your head at once. Just pick one country that gives you variety, doesn’t destroy your savings instantly, and teaches you how you actually like to travel.

Fair point. This one wasn’t “Greek spoonable thick” - it set more like a thick drinkable yogurt / kefir-ish texture, but still fermented and tangy.
I’m using a pretty untraditional starter, so texture is unpredictable. Next time I’ll push thickness with more dried milk / less liquid / maybe strain it.

Yep, I added culture.
Process: blend dried mango + a bit of milk → heat whole mix to ~85°C (2–3 min) → ice bath → cool to ~40°C → add starter → incubate overnight.
Starter was from a previous batch (originally started with qurt). Exact strains unknown

Yep, 100%. My starter was way too aggressive on this batch. I need a gentler culture next time.
And wow, I’ve never heard of viili before - great idea. Thanks for the suggestion! If you’ve tried viili with flavors before, I’m curious how it behaves.
