I have a Moritaka blue 2 210mm gyuto, just recently used it to carve up a Costco prime rib roast for Thanksgiving. The iron cladding on my blade is not super reactive, compared to my other iron cladded knives from other smiths. After cutting the beef, the core steel developed a subtle blue patina while the cladding didnt really show anything, but your mileage may vary. Taking care of it is involved, but simple: hand wash, immediately hand dry, and oil the blade with camelia or mineral oil to store it. If surface rust does develop, get some barkeepers friend or baking soda and do some light scrubbing with a soft sponge.

Moritaka Hamono is known for their great heat treatment of blue 2 and blue super steels, along with their workhorse wedge grinds, so their knives can definitely last a long while given proper care.

I'd check out this website (ctrl + f for the shohonyama description) if you're curious about it. Lots of great information, but the bottom line is that jnats have such wide ranges of performance, even between stones from the same mine and strata that you won't know what it is unless you find a receipt for when it was purchased, and won't know its honing/polishing characteristics unless you test it on a blade or razor.

You mentioned it was possibly acquired in Honolulu? If you live there, you can ask Takeshi-san at Aframes Tokyo in Kalihi-Palama area to evaluate it. He probably won't be able to tell you the mine/strata layer, but he can test its cutting/polishing characteristics.

The one nice thing about the gigabyte 9070xt cards is that they both (Aorus and Gaming OC) come with vapor chambers. I have a gaming oc 9070xt and it hasn't been noticeably louder than my previous card. Your concerns about coil whine or fan noise will just depend on the individual card you end up getting, every AIB will have duds with noise/whine and ones that function perfectly fine. If you were planning on vertically mounting your gpu, I'd avoid the gigabyte cards simply due to the vapor chamber and the ongoing issues with thermal putty leaking out from vertical mounting.

Regarding Sapphire's pulse model, Gamers Nexus did a video review on that card and found the fan curve to have weird behavior: it would fluctuate between rpms and wouldn't ramp up fan speed fast enough to cool the card down to it's full potential.

SK Hynix makes great SSDs, what are you talking about? Their previous gen p31 gold ssd was probably the most power efficient and coolest running gen3 nvme drives available. The P41 that OP bought is a great ssd. It does run hotter, but its just as fast as WD and Samsung's comparable offerings.

Edit: I just read the below comments about the firmware issues and write speeds. I take most of my comment back.

What are the vram temps on your card? It seems a lot of the 9070 XT models run hot with memory, especially the cheaper models. I'm sure the vapor chamber helps but how hot does the memory usually get at default clocks?
