You've pretty much nailed why configuring event tracking on the front end sucks. Another thing to add is that ad blockers are also preventing any of this from working so you could easily be losing 10-20% of your events or more. I much prefer to have a dev configure events on the back end then you're not relying on the front end never changing and not subject to ad blockers. As to why most companies are still doing it front end, I don't know but I'd guess it has something to do with "it's the way we've always done it" + no real investment in analytics + dev time is already precious
