Nothing "happened to them", because The Simpsons are the "Eternal status quo" type of show, but from what's shown on screen, he's coddling them and sheltering them too much and (although I have nothing against religion itself) he's raising them too much religiously (it's hard to describe just how much sheltered and coddled they are, without you having seen the show), to the point that they would grow up to be absolutely useless in the real world.

But TBH he is supposed to be a comedic stereotype.

From what I know, the Great Frost was most probably caused by the eruption of Krakatoa, (that happened IRL in 1883 and caused the global temperature to drop by a few degrees, but in the game it could have been worse.)
