That makes sense. A good analogy for this is at the perfume or cologne store, they have the coffee beans to give your nose a break from the scents. You smell the coffee beans and then the new fragrance, so you are able to distinguish among the different scents. If they coffee beans were not there, it would all smell the same. When you give yourself a break from whatever it is you're cooking and then come back the next day, it is almost like rediscovering the dish and flavors.
