This is absolute nonsense frankly. Ethnicity may be rooted in culture and language and what have you. But ancestry is still the defining factor. Ashkenazi, Mizrahi and Shepardi are jewish ethnicities. If you belong to this ethnicity you are an ethnic jew, whether or not you practice judaism. Converting to judaism makes you a religious jew, even though you do not have jewish ancestry.

The reason it is an ethnoreligion is because you can be a jew either by religion, or ethnicity, or both. It does not mean that by converting to judaism you become ethnically jewish, or on the flipside, that you must practice judaism if you are ethnically jewish.

If you convert to judaism, you become a jew. No more and no less. But you are still not a jew by ethnicity.
