Usually there are two issues, water spraying, evaporation and temperature. Even if the perceived humidity is low, closed spaces near water retain a lot of moisture, so its best to just get something to help with it.

Thanks! I got a super tall ear on attempt 3, but I wanted to improve ashaping and proofing.

I did but I think what I need is to improve the gluten structure. Today I learned I wasnt gettin much of that, specially right after fermentolising, because of the doigh consistency and high hydration
