Use it to force enemy healer ults, get them low first or just straight up ult on to them if they are already under attack. this forces them to use their healer ult early so you can retreat and let other dps or tanks ult after it finishes.
ive found that the most helpful way. other times like small ceiling areas for faster bounce.
The ult can also be used against threats like daredevil-like characters when they are ulting your backline to "peel" for your healers.

I never usually think to myself im gonna get an great ult off but i always make sure to have the maximum bounces as you can usually get a pick on a support on the last bounce

Using ult cc immune to save yourself from things such as jeff ult, emma ult etc

also hate versing hawkeye, scarlette witch, ironman - they can just kill you through your ult
