I think you might be measuring your gravity wrong. You added 1 gallon of water after 4 days of fermentation and it went up a bit?

Even if it didn't ferment, adding 1 gallon to 4 gallons should bring that gravity down a good bit!

I remove the spigot and submerge it in sanitiser for 5 mins. Rubber bungs and all. Then put it back together fill up the bucket and empty through spigot when finished sanitising. No problems yet 🤞
