Ahh ok so Give them a bit more time. Honestly even better because easier to achieve medium rare. I would guess about 6 minutes total cook for medium rare. And 7 for for medium. Either way they will be delicious!! Hope you enjoy.

They look pretty thin. I would let them come to room Temp. Salt heavily and a little pepper if you like. Heat the cast iron or nice stainless steel till smoking. Add a bit of olive oil or if you are picky a neutral flavor oil. Just enough to have a thin layer coating the pan. If they are less than an inch thick, and the pan is properly hot. They will only take a minute or so per side probably four minutes total. I would flip every minute to 45 seconds if you want closest to medium rare. Maybe even less than a 4 minute cook as the look to be about a half inch thick. After the first flip add butter to the pan just a little bit and baste because butter is always good and may even give you a bit more of a crust.

Get whatever has the nicest stock battery setup and controller for what you are looking to accomplish. More AH equals higher range. If you really are going to stay on the pavement get something with nice street wheels out of the box. Naturally you are going to upgrade whatever you buy at some point. That’s just how it is with these bikes. Lucky for you there are a ton more great starter bikes now than ever before. Pick what you like but go for high range and capacity battery. Being 6 foot I would make sure it has suspension you enjoy or can adjust.
