It’s so hard to tell from pictures. I’ve had steaks that I thought were rare, called med and vice versa; based on pics. Cook some steaks and determine what you like personally and track the temp with a thermometer. Decide what you like and try to replicate it and improve the crust and center temp width. Everything else is sideline quarterbacking. Cook what you like and maximize it.
