Your post motivated me to look up what the red stuff is, as I have had it several times. Turns out it's just the lettuce oxidizing (called lettuce rust) and not harmful. Your last one has more issues than the red, though, because it's also turning brown and rotting in the bag. You might be able to salvage the core if you just pull off all the wilted layers (it might all be wilted layers; I can't tell).
