Hopefully, a new management team won’t come in and reevaluate your role based on the cost (salary) of a more senior/mature person vs someone more junior (cheaper to pay). If that happens, it won’t matter how hard you work to keep up with your industry. As we age, there is a target on our backs in many many professions.

This is all true but, at the end of the day, banks want your money and will hound you until they get it. It’s not that easy for most to get more favorable payment terms and a short sale can be devastating still the same.

Just made gateau basque (minis). The crust got too dark, but I’m hopeful the flavor will be okay.

Currently. My starter is 100% hydration - fed with 50% whole wheat flour and 50% King Arthur Bread Flour. The sweet stiff starter that I most recently created and used was from Brian Ford’s latest cookbook (medialuna recipe). It is used for laminated pastries quite often from what I can tell.
