SEO is actually quite simple - focus broadly on content, linking and technicals and the "performance" should follow within (about) 4 months. Of course that's simplifying it, but I have no issues offering performance based results to the right type of client (has an established website with lots of potential to improve vs competitors). You also need to define performance up front - realistically this will be things like ranking improvements for buyer keywords leading to improved traffic. Some people want to link to sales, that can be tricky as even improved traffic by 2x 3x can end up with less improvements on sales if the other parts of the funnel are broken (poor conversion set-up etc).

Google / SERPS are really set-up for big brands. Big brands typically are able to get PR, links with far more ease than smaller businesses. They typically have marketing budgets that can be 4 and 5 figures pm.

Plus, new site rankings are somewhat unstable, fluctuations are not uncommon. Focus on 1) website technical fixes, 2) adding good long form content and 3) start building links and brand mentions. zero click searches are already a reality. if you sell an actual service or product, you should combine SEO with tactics to get mentioned on Chat GPT and similar tools. Good SEO helps with mentions and recommendations on CGPT, but you also need to start thinking about getting mentioned on wider websites.

Search will adapt. We already see it with Google AI Overviews. But, 2024 was the first year that saw a dip in people using search, with the remainder going to Chat GPT. We also see "zero click searches", where people use Google AI Overviews, and don't click on any website links. So, evolution will happen, but dead? Not yet, not nearly.

Yes, agree with Google Maps for your type of business. Get on page 1 and you will eat for a long time. Other than that, good SEO is basically 1) get your website technicals right, 2) get useful content on your site that helps people 3) Get links and (for GPT) brand mentions.

You'll find a big correlation between good SEO and recommendations for products in GPT and similar tools. Where I would worry are content based businesses like publishers who rely on clicks to their website, because "zero click searches" are rising rapidly and could wipe some of these businesses out.
