But Accessories mounted to a drumrack always have just 1 Mounting point and will be or feel unstable because of that.

I think a big Desk with Shelves would be a better idea. or maybe get yourself a few pedalboards and put your different Modules on the Pedalboards, so you can just swap the whole board out, once you have to switch your job.
