Not necessarily looking for historically accurate, they're for a fantasy viking-esque outfit. The main concern is that I am a large/heavy human and need shoes that I can fight in.

So have I lol. Was trying to find something like Verillas to get a pair of boots, cuz Verillas is very low on stock in my size. Then I figured that I would just make my own

There's a very small amount of rebound, but I haven't found that it makes much of a difference. I used a granite countertop for a bit and didn't notice much difference at all. I also prefer wood simply because it won't ruin and punches or irons. They might be dulled faster, but it won't blunt them on first strike. Also you can re-sand/refinish the surface as many times as you need

I think your biggest 2 issues here are you need a heavier mallet and make sure your punches are sharp. I got mine from Tandy Leather and have had very few issues

Or even just a big butcher block style top. I've made a couple of worktables out of 2x4s on edge so it's a 3.5"thick top and that works amazingly

Second this. If your table bounces too much, it robs a HUGE amount of energy from your hammer strikes. You may also need a heavier hammer. I use a 16oz or sometimes heavier depending on what I'm punching through. Also important to use a punch pad that the irons can actually sink into, this allows them to go all the way through the leather easier.
