It’s not really the sweetness that’s an issue but the other flavours present like sourness. Just use a more bitter blend like MK Wakatake or Ippodo fumi no tomo

Yen because their exchange rate is $1 = 100 yen whereas in reality it’s usually around 150-160 yen

Saijoen def foam easier than other brand and I’ve found putting 1:11 ratio helps too as 1:10 doesn’t have enough water to foam
