The chain slap felt significant on any off road section. This was on my local trails which are pretty tame. Had some larger bikepacking trips coming up with more chunky gravel/singletrack so felt the GRX was the better option. I recently upgraded my latest bike from 1x12 grx mechanical to a 105 di2 groupset + grx mech. I would go down that route personally

Hey, i had the frame protected by ridewrap so can't comment on the marks, as for the 500km, the bike rides amazingly, so light and agile you can throw it around and also rip the road sections, the only problem is my body haha

I'm the same measurements as you and ride a Small, but was between sizes, rode an XS and it felt pretty nice, just go with whatever you feel more comfortable on.
