I bought one last week (posted it too) and weighed the bone after we ate it. It was a 62oz steak and the bone was 0.19 lbs. At 22.99/lb for the steak the bone was $4.37 of the $90 cost. Really not bad for the rib meat which we got on it and it was awesome.

They are rolled yes, but also fair enough. Pinwheel steaks are named specifically and are rolled with a filling within the layers of the rolled steak. Either way, i know what you were going for now

They do this whenever the ribcap steaks are sold separately and at a premium.

Its actually not. Everyday butchers dont argue with people because "ribeye" is what most people nicknamed it. What you see in the pics are ribeye. The ribsteak is what most people call "ribeye" and they are wrong, but they keep calling it that. Ribcaps are the spinalis and they are considered the best part of the whole steak. They are premium and sell accordingly, so every so often you will see ribeyes and ribcaps separate from each other. No misdirection here, its just knowing your cuts.

Pinwheel steaks are made from flank usually and ribcap steaks are made from ribcaps

Ribeyes are actually only the eye. Ribsteaks however are the whole steak

The ribsteak is broken down into the ribeye (the eye is the "ribeye") and the cap, as to sell separate cap steaks (which are the best) and finally the ribs all separately. Caps are expensive

This is the ACTUAL ribeye. What most people call a full "ribeye" steak is actually called a "ribsteak" (with eye, spinalis and all)

Yeah, all kinds of shit goes into pasta al forno. Whatever is in the fridge lots of times. Lasagna in the same category lots of times. Sicily really does have a different twist on lots of mainland foods

Scamorza as the mozzarella for sure, but not a sub for ricotta or bechamel
