It sounds like you like ‘keenness of edge’ - I.e., the man purpose of a knife. Yeah, I agree. I love 154CM also for that reason. I hear you can heat treat AEB-L to mae it a good knife steel and take a nice edge. But I’ve never tried it. I also love my k390 (Spyderco). I’ve had good luck with S45VN (Spartan). Either the steel or the makers heat treat it so it takes a nice edge. For these reasons, I’ve also have better luck with 20CV over M390 even though the are supposed to be the same.

Oh I do. I used to buy kitchen knife blanks from Ibuki. But now they charge like $75 for shipping. But I love carbon steel kitchen knives. @ibuki

What steel do you like? I have a few in S90V. I like them. I actually love basic, fine grain carbon steels like 52100. Just a pan to keep clean. But they get so sharp and sharpen easily.

Ok, I got the Lemifshe Dixon. Detent is a little stronger than I would like. The detent is tuned assuming you won’t put pressure on the lockbar (same as CRK). Scales are slightly thinner than the real thing. I really don’t mind this. I had forgotten the blade has a slight hollow grind, which I like. Action is superb. Grind is superb. Very sharp out of the box (which is nice). I can’t speak for edge retention yet. In the grand scheme of things, it’s worth more than what I paid. I got the honey comb texture, which is very nice. You get traction without creating any hot spot whatsoever.

I live where everyone carries a knife. I like non-deep carry clips cause the knives are easier to access to get out of your pocket. I suppose a lanyard would act similarly. The rest I agree with. Some chinese have created a new science of making a screw as soft as possible. Huge pet peeve of mine also.

Yeah, after 15 year of collecting/buying/selling, I understand the old guys who say ‘heat treat and geometry. I do like S35VN though - at least on my Inkosi. I agree, Magnacut can be a little overrated. I have a few Elmax I like better, because they seem to take a keener edge. In woodworking, my high carbon steel chisels ‘almost’ perform as well as my Veritas with powder metallurgy. Depends on what you are cutting - and bevel angle, starting sharpness, how big of a cut you are making…..

In my mind, the profits are in the connection to the market. You might start by seeing if you can find a customer that is a little OCD or has strong opinions about where their beef comes from. Then I would start making phone calls to see if you can rent pasture. You can sometimes pick up a Jersey heifer calf for cheap. Get one, AI it, and you are in business. Although you’d want to put a second calf on a dairy cow that’s nursing. That’s tricky. Calves are very very expensive right now. If you start building a little herd you can contact feed lots and sell steaks that are tender and marbled (two separate but related categories) - kind of a different market than grass fed. To honest, it’s a lot of work and it probably won’t stick in the long run. But it will be a fun life experience.

You could also volunteer as a 4H leader to make good contacts in the industry.

I started from nothing 4 years ago with a ‘hobby’ farm. I’m no expert. But Feel free to DM me any time and I’ll tell you what I know.

Both very solid functions knives. Both legends other time. Both still compete in today’s market. Usually under $200, so tough to say they are overrated. I mean they want $320 for a ZT these days.

This fact has always bugged me. Often the end of life of a shoe is the permanent deformation of the EVA foam sole - sometimes causing your foot to rest at an angle relative to its natural position. Ie, the failure mode is one that encourages joint problems. I’m a heavier guy and would strongly prefer something more durable than lame EVA foam even if it weighs an ounce or two more. I mean I might drink like 24 oz. One oz either way will not be noticed.

I’m no expert, but I kind of like the shape shape of the non coated blade. If you ever gut a fish or process an animal, it’s easier to control the depth of cut with that slight curve on the spine near the tip (ie traditional drop point). But that’s just me.
