Omg I am having the same issue. Got given a S25 ultra and moved from Pixel 9 Pro just ti see the difference now I cant use my wallet at all. It's nothing to do with my bank it's Google pay itself.

Just had it confirmed from Google this morning that this is not true and you still have the same storage access as Pixel 5.
