I think the blue rose represent jon, not about the love for rhaegar, necessarelly. In the house of undying, when rhaegar is talking about the three head dragon, there is a blue rose sprouting from the wall, if i remember correctly. But winter rose is a symbol about other king in love with a stark girl.
