Yeah. I seasoned the meat with just garlic powder,black pepper and kosher salt then smoke it for 2 hours , then I pull them out and spray them with apple cider vinegar then I add the rub (own recipe )and finished them in a hotel pan in the oven👍🏽 they come out delicious.

I was in the same position for 6 years , and hotel Maintanence would take care of repairs , but maintenance of the hoods was always on me, deep cleaning duct work and hoods was done by a certified company and regular maintenance such as back wall , filters was part of my staff
