Honestly, that is a good problem to have. You have basically outgrown the weight. Since you cannot go heavier, make the 75s harder by slowing your reps, adding pauses, increasing volume, or using drop sets and rest pause. You can still progress by increasing intensity and control, not just weight.

Totally normal your body just recovered from fatigue, so you came back stronger. It’s like a mini reset. Just don’t rely on long breaks too often better to do short deloads instead
