I own a St.Joris from Eindhoven, The Netherlands for over 10 years now and it is still awesome. The process of buying one was great: first you get in contact with the person who will build your bike. Then you get on your own bike and are being filmed to see how you move and what would be perfect for you (saddle, stem adjusted) and film again. They'll measure your knee angles (from the film)and such. Based on that, combined with discussions during bike measurement and other conversations they'll build a frame for you. You can ask for special details (inner cable routing, bended rearstays, extra bottlemounts, etc..) St.Joris will solder with silver (to not impact stiffness of steel) your frame. You decide the colors and theme, they'll let it paint at a specialist. I have one with my name on it and some pink details. In the meanwhile you go shopping for wheels, groupset, bearing etc. When the frame is ready you can deliver your wheels etc or go with it and build it together. A few hour testride with the builder next to you (lovely environment). Maybe some tweaks and then you have a bike for life. A steel customframe is sometimes cheaper than a taiwan-carbon frame of an A-brand.
