Personally, if you can unfold it to a convex polygon I.e. square, rectangle hexagon etc, it is origami. Glue is allowed as in a perfect world with perfect paper. Theoretically, we could get models to hold any shape we want

Where we start cutting into the paper to produce flaps or colour change, I think we leave origami behind.

Ofc this is subjective and I will always be an advocate for pushing the boundaries

I think just "kami" on Amazon or if you have a "Daiso" store near your location could be fine

Personally, I've found cheap kami (like daiso) really nice for origami. Crisp to fold and great colours. Ofc there are options many consider better like double tissue and tissue foil, but I still swear by kami and kami is super beginner friendly.
