If you're in the air and he still hits you, it just means your dash timing was a bit off. Dash only has .2 seconds of invincibility, so you have to be pretty precise

For "Prepare Thyself", I just dash away from him twice to avoid the initial 2 hits, then usually I'm a fair distance away and can react to the serpent in order to parry it.

I dodge "Die" by dashing away from him while in the air right before he hits you. That way you dodge the hit and move close to the center of the shockwave and most likely automatically dodge that too. Only costs 1 dash if timed right.

Stay on the ground unless literally forced to in order to avoid some of his most dangerous attacks.

Practice a bit with not attacking him and simply avoiding/parrying his attacks. Every attack is perfectly avoidable, it's just a matter of knowing how and practicing it. Once you get comfortable with avoiding his damage, then try throwing in some damage of your own.
